Recipe corner - Weird and Wonderful Breakfast #4

I've run out of oatmeal and so was scrounging around this morning and came up with this perfectly delightful morning repast:

1. spread natural peanut butter on two graham crackers (the ones with cinnamin sprinkles are super nice)
2. put a dollop of honey on top
3. put a couple of dried apricots on top

It was surprisingly satisfying and relatively healthy.

Here's a weird and wonderful lunch for those of you with microwaves:

1. Get your hands wet and form 1 1/2 tbsp of miso into a ball.
2. Roll the ball in furikake (a salty sprinkle mixture made of finely chopped kombu seaweed, seeds, and spices - you can get it at health food stores or make your own in the blender)
3. roll the ball in chopped scallions
4. wrap the miso ball in plastic wrap. pack it in your lunch with a small container of frozen veggies and tofu squares and a package of udon noodles (the kind that come already cooked and squishy)
5. At lunch time, put everything in a mug with water. Stick it in a microwave until it's hot. Eat with rice cakes or pre-frozen, microwaved onigiri.
